These recipies produce light and crisp, whole wheat tortilla wrap. Although the grill is optional, however, it gives a distinct taste that appeals to me. Max time for prep and cook 10 to 15 mins.

  • Healthy with lots of vegetarian option.
  • It can be made in advance and reheated afterward.
  • Usually ideal as work lunch or a light snack at home.

Ingredients

Main

  • tortilla wraps
  • hot chili sauce
  • cheese (any cheese would work but I like cheddar and a bit of blue stilton)

Protein (option of 1 or more variation)

  • 2 eggs
  • cooked and diced sausage
  • cooked chicken, torn in chunks
  • bacon
  • smoked salmon
  • smoked mackerel

Vegetable (option of 3 or more variation)

  • sweet corn
  • diced carrot
  • sweet pea
  • beetroot
  • green beans
  • broccoli
  • bell pepper (different colors)

Method 1: Grilled omelette veggie wrap

  1. Break and whisk 2 eggs in a clean bowl.
  2. Add seasonings (salt and pepper).
  3. Make omelette in a frying pan.
  4. Add sweet pea, sweet corn and bell pepper on to the cooking omelette
  5. Put the tortilla on a clean plate and liberally spread with chili or tomatoes sauce.
  6. Transfer the omelette onto the tortilla, sprinkle cheese on top
  7. Fold and grill if you like or just slice it into two and munch off.

N/B Let it be slightly underdone if you will use a grill to finish it off.

Method 2: Grilled chicken veggie wrap

  1. Put the tortilla on a clean plate and liberally spread with chili or tomatoes sauce.
  2. Tear the cooked chicken on top
  3. Scatter a handful of the steamed broccoli, bell pepper and sweetcorn
  4. Top up with grated cheddar cheese (optional blue cheese for a distinct flavour).
  5. Fold and grill

Method 3: Grilled smoked salmon veggie wrap

  1. Put the tortilla on a clean plate and liberally spread with chili or tomatoes sauce.
  2. Scatter a handful of beetroot, green beans and sweetcorn
  3. Distribute the salmon on top
  4. Top up with grated cheddar cheese (optional).
  5. Fold and grill

Hot Tip

Microwave the vegetable of choice for 3 minutes to speed off the process.
