Ingredients

  • 1 tortilla wrap
  • hot chili sauce
  • cheese (I like cheddar and a bit of  blue cheese for naughty tang )
  • 2 eggs
  • sweet corn
  • sweet pea
  • bell pepper (red and yellow color)

Method

  1. Break and whisk 2 eggs in a clean bowl.
  2. Add seasonings (salt and pepper).
  3. Make omelette in a frying pan or using an electric omelette maker.
  4. Add vegetable of choice in quantity of your choice on the cooking omelette
  5. Put the tortilla on a clean plate and liberally spread with chili or tomatoes sauce.
  6. Transfer the omelette onto the tortilla, sprinkle cheese on top
  7. Fold and grill if you like or just slice it into two and munch off.

N/B Let the omelette be slightly underdone if you will use a grill to finish it off.

Hot Tip

Microwave the vegetable of choice for 3 minutes to speed off the process.
