Ingredients
- 1 tortilla wrap
- hot chili sauce
- cheese (I like cheddar and a bit of blue cheese for naughty tang )
- 2 eggs
- sweet corn
- sweet pea
- bell pepper (red and yellow color)
Method
- Break and whisk 2 eggs in a clean bowl.
- Add seasonings (salt and pepper).
- Make omelette in a frying pan or using an electric omelette maker.
- Add vegetable of choice in quantity of your choice on the cooking omelette
- Put the tortilla on a clean plate and liberally spread with chili or tomatoes sauce.
- Transfer the omelette onto the tortilla, sprinkle cheese on top
- Fold and grill if you like or just slice it into two and munch off.
N/B Let the omelette be slightly underdone if you will use a grill to finish it off.
Hot Tip
Microwave the vegetable of choice for 3 minutes to speed off the process.
